This bliss ball slice is a completely wholesome and delicious bite to enjoy as a snack, when you're craving something sweet or as a nourishing addition to a child's lunchbox. Louie adores it!
I find it much easier to prepare the bliss ball mixture and then press it into a pan rather than attempt rolling the balls with both children in tow! The one time I tried it with both children, I was removing cocoa from every inch of the kitchen for a week (thanks Louie!). Isabella on the other hand is a lovely wee helper but I suspect with time and age, Louie will be much the same. In the meantime, it's bliss ball slice all round :)
Bliss Ball Slice - makes ~20 squares (gluten- and dairy-free. Can be made nut-free).
2 cups dried pitted dates
1/2 cup almonds or sunflower seeds
1 Tbspn melted coconut oil (I use Tanna Farms)
1 tsp vanilla extract
1/2 cup desiccated coconut
1/4 cup cocoa
Pinch of salt
1-2 Tbspn extra coconut for decorating
Place the dates into a bowl and cover with recently boiled water. Lave to soften for 10 minutes. Drain water.
Place the almonds into a food processor and process until roughly chopped. If using sunflower seeds you can skip this step. Place the drained dates and the remaining ingredients (except extra coconut) into the food processor and process until you have a thick paste. You may need to scrap down the bowl a few times and process again.
Pour the mixture into a baking paper lined pan with sides and press the mixture down firmly with a back of a spoon until smooth. Sprinkle over extra coconut and place in the freezer to set for a few hours. Once set remove form the freezer and slice into squares.
Keep the bliss ball slice in a sealed contained in either the freezer or fridge. I recommend the freezer if you are adding the slice to lunchboxes as it will stay firm.
