Beetroot & Cherry Smoothie


I was lucky enough to be sent an amazing little package from Good Health Products which included the most delicious organic beetroot powder. It contains only 100% beetroot powder and provides 2.1 mg of fibre per serving. It is such an easy and delicious way to add antioxidants and other vegetable nutrients to your morning smoothie!

Cherry season is coming to an end here in Marlborough so this smoothie is a wonderful way to make the most of the ‘end of season’ fruit, especially the seconds as they are cheaper but still super yummy! However, if cherry season in your area has already ended, you can replace the cherries with about 1/3-1/2 cup of any fresh or frozen berry. I’ve also found six prunes work well here too in place of the cherries or berries. The addition of avocado and Pic’s Peanut Butter lends healthy monounsaturated fats to increase satiety to ensure the smoothie keeps you going all morning, while the peanut butter also provides a source of protein too.

I hope you enjoy this smoothie combination as much I have been…perfect for kiddies too who love pink smoothies. They won't even know it contains vegetables!

Beetroot & Cherry Smoothie - serves 1 adult or 2 children

  • 1 banana, sliced into rounds and frozen

  • Flesh of 8 fresh cherries, stalks and pips removed (if cherry season has come to an end where you are, 1/3-1/2 cup of any fresh or frozen berry or 6 prunes works well too!)

  • 1/3 avocado

  • 1 Tbspn Pic’s Peanut Putter

  • 1 tsp runny honey

  • 2 tsp Good Health Organic Beetroot Powder

  • ½ cup water

  • 8 ice cubes

To serve: Toasted pumpkin seeds and coconut chips

  1. Place all of the ingredients into a high-powered blender or Nutri-bullet and process until thick and creamy

  2. Pour into a serving glass and top with toasted pumpkin seeds and coconut chips

  3. Enjoy!
