Simple Cheese Stuffed Figs

This has to be one of the most delicious ways to eat figs! I have been eating it all week for lunch and still had it for lunch today, it's just so simple and utterly scrumptious.

You could use any kind of cheese for this simple recipe whether it be goats' cheese or blue cheese or other. I love eating cheese and figs with nuts too - the crunch just adds that little something special. My favourites are hazelnuts or walnuts. However, given that I collected a whole pile of walnuts the other night with the dogs in tow, I think I'll be cracking walnuts for a long time yet!

There are just so many reasons to love figs and to enjoy their intense short season. You can read all about my love for this holy fruit here. I hope you enjoy these simple cheese stuffed figs as much I have. Cheers to many more fig lunches and light suppers over the next few weeks!
