Lunchbox Muesli Slice

I've finally cracked it. A nutritious homemade muesli slice that's filled with healthy, wholesome ingredients that's free of refined sugar and grains.

This slice is so simple to prepare and makes the perfect addition to any lunchbox, whether it be for children or adults! Packed with nuts, seeds and dried fruit and bound together by the natural sweetness of honey and a little melted coconut oil, it is truly delicious. The ingredients provide a source of vitamin E, zinc, calcium and heart-healthy omega-3 and omega-6 fatty acids. This slice is high in energy (albeit nutrient dense energy) so remember to cut your squares into appropriate-sized pieces. It would also make a brilliant breakfast on the go with a glass of milk or pottle of yoghurt.

I've been enjoying a wee slice crumbled atop thick Greek yoghurt as a mid-morning snack this week and it's been the envy of the office! I've even sliced and frozen a batch and it still tastes great out of the freezer (just be sure to let it come to room temperature before you bite in!). Those who would like to spread the muesli slice out over a few weeks may want to try this little freezer trick. It's always good knowing you have healthy snacks on hand for when you need them.

Lunchbox Muesli Slice

  • 1/2 cup sesame seeds

  • 1 cup pumpkin seeds

  • 1/4 cup black chia seeds

  • 1/2 cup mixed cashews and almonds, roughly chopped if you wish (I like mine whole)

  • 1/2 cup goji berries or raisins

  • 1/2 cup dried apricots, chopped

  • 1 teaspoon cinnamon

  • 3 tablespoons honey

  • 4 tablespoons coconut oil

  1. Line a slice tin with baking paper

  2. Place the seeds on a baking tray and toast for 3-4 minutes. Once toasted pour the seeds into a large bowl.

  3. Melt the coconut oil and honey together along with the goji berries to allow the berries to soften

  4. Place the nuts and dried fruit along with the melted coconut oil and honey into the bowl and quickly mix everything together

  5. Pour the mixture into the prepared slice tin and press down firmly to ensure the slice is packed down

  6. Cover the top of the slice with baking paper and place it in the fridge with something heavy on top to weigh it down. I used a 1Kg yoghurt container!

  7. Once the slice has set, cut into small pieces and store in a sealed container in the fridge. It should last for around one week. Alternatively, store the pieces in an air-tight container in the freezer and it will last for a few months.
