I love broccoli but my absolute favourite way to eat it is lightly steamed and then cooked with a little butter, lemon juice, lemon zest and some sliced almonds. The butter adds a wonderful flavour (of course it does!), the lemon adds a bit of zing and the almonds a lovely crunch.
Broccoli is packed full of vitamins and minerals as well as being a great source of antioxidants which help to keep you healthy and prevent disease. I promise you this 'Lemony Almond Broccoli' will become a regular in your house. I serve this dish with everything from steak to roasted chicken and even my husband’s wild pork. Just thinking about it, a few pieces of grilled haloumi or a piece of roasted salmon would be equally as good. I would quiet happily eat a big plate of it all on it's own for lunch too!
I like my broccoli bright green and still a little crunchy so I only steam it ever so slightly knowing that it will go into a pan for a few minutes with the butter, lemon and almonds to become coated in all of the deliciousness. If you don't have broccoli, this also works well with green beans. Tonight I enjoyed this Lemony Almond Broccoli with a few pieces of basil pesto and cherry tomato roasted chicken. Delicious (and you have probably figured out by now that delicious is my favourite word!).
Lemony Almond Broccoli
Serves 4-6 as a side dish (depending on the size of your broccoli)
1 head of broccoli, broken or cut into smaller florets
50g of butter
Zest & juice of half a lemon
About 1/2 cup sliced almonds
Steam or blanch the broccoli until bright green but still crunchy
Place a pan over medium heat and once heated, add the butter. Once the butter has melted, add the almonds and toast until golden.
Next add the blanched broccoli, lemon zest & juice and stir everything together so that each piece of broccoli is coated in some butter, lemon and almonds.
Once the broccoli is warmed through it is ready to eat!
Note: If you are feeling organised you can steam the broccoli as described in step 1 above and then re-fresh it in ice cold water before keeping it in the fridge until you are ready to heat it with the butter, lemon and almonds.
